What I love about Christmas brunch is that you often eat a bit of everything. I would prefer to see a table full of both sweet and savory dishes during Christmas brunch. I like to go for simple brunch recipes, because then there is enough time to enjoy all those goodies together.

In this selection you will find 10 different brunch recipes with something for everyone. Savory and sweet dishes, suitable for sharing but also for serving separately and with both meat and vegetarian. For each dish I have also indicated what you can prepare so that you can eat without Christmas stress. And maybe I also included some alternative recipes, because I couldn't choose ;-). 2. Croissant pudding with blueberries

You can make it with a can of croissant doughthis delicious croissant puddingwith blueberries and pecan nuts. The preparation is a lot of work and then the oven does the rest of the work.

3. Savory galette with sweet potato, beetroot, gorgonzola and hazelnuts

It looks beautiful, is very easy to make and I have never had one fail. Then I'm talking about a galette of course! In other words, a cake made from pie or puff pastry that you fill with ingredients and then 'close' all around.My savory galetteI filled it with a mixture of baked sweet potato with beetroot, red onion and herbs. I also added some apple and combined the filling with gorgonzola and hazelnuts. This will really be a spectacle on the dining table.

4. Christmas wreath with pistachio spice

If you really want to go all out during Christmas brunch, you will definitely score with this fantastic oneChristmas wreath with pistachio spice. I'll be honest, it takes a while, but it's all worth it when you take your first bite of this deliciousness. You can prepare the Christmas wreath a day in advance and store it in an airtight place outside the refrigerator.

During the Christmas brunch, anything can be on the table. So also this onekerst rocky road browniesare very permissible as far as I am concerned. Be careful not to eat too much of them, because that can happen because they are so outrageously tasty. You can make the brownies a day in advance.

7. Savory bread pudding with brie and bacon

Thissavory bread pudding with brie and baconis also known as strata and is often eaten in America the day after Thanksgiving with its leftovers. And of course you can do that just as well the day after your Christmas dinner. The basis is eggs, milk and cheese and you can also add whatever you like. Think of spinach, mushrooms, leftover turkey or whatever. You can prepare this dish a day in advance and store it covered in the refrigerator, which makes it extra tasty because the bread becomes wonderfully soft.

8. Blueberry cheesecake flaps with frangipane

You won't hear me complain if there is a tasty pastry among the brunch dishes. And if it's this oneblueberry cheesecake flaps with frangipanecertainly not at all. They are really delicious! You can prepare them a day in advance, store them in an airtight container outside the refrigerator and, if necessary, pop them in the oven before serving. Because they taste best when still a little warm!

9.Huzaren salad with beetroot and herbs

With a colorful salad on the table during Christmas brunch you immediately create a festive atmosphere. ThisRussian salad with beetroot and herbsis a vegetarian variant of the classic Russian salad. And I actually like it even more because of the wonderful balance of sweet and sour. You can prepare this dish a day in advance and store it well covered in the refrigerator. All you have to do is garnish it nicely on the plate before serving.

10. Amandelcroissants

Finally, I share a new recipe from this year. I think these homemade almond croissants are so fantastic! You can prepare the syrup and frangipane a day earlier. You prepare and bake the croissants just before brunch.

What you need for 6 croissants

    • 120 ml water
    • 60 grams of sugar
    • 1/2 tl amandelextract
    • 75 gr butter, room temperature
    • 75 g caster sugar
    • 1 egg, beaten
    • 75 g almond flour
    • 1 tbsp flour
    • 6 croissants, few days old
    • 80 g garnished almonds
    • powdered sugar

Preparation method

Preparation time: Preparation 30 minutes (including cooling) + preparation 10 minutes + oven 15 – 20 minutes

1. Mix water, sugar and almond extract in a saucepan. Heat until the sugar has dissolved and then let it simmer for another 5 minutes. Then let it cool completely.

2. Preheat the oven to 175 ˚C and line a baking tin with baking paper.

3. Beat butter, caster sugar, egg, almond flour and flour with a (hand) mixer until cohesive. This is your frangipane that will later be spread on the croissants.

4. Cut the croissants open with a sharp knife, but do not cut all the way through. Brush the insides completely with the syrup. Then spread the bottom with a generous amount of the frangipane. Place the top on top and spread some frangipane over it. Sprinkle with almonds to garnish.

5. Place the almond croissant on the baking tray and bake for 15 – 20 minutes until the almonds are golden brown in color.

6. Let cool slightly, sprinkle with icing sugar and serve.
