This is a second salted egg yolk recipe which I tried shortly after experimenting with my own 4 ingredients salted egg yolk cookie recipe which is easy and fuss-free as there is no need touse electric mixer or chill the dough before use.The method here is slightly different, I have used pure salted egg yolk powder instead of cooked salted egg yolks. The pure salted egg yolk powder is really convenient to use as there is no need towash away the thick layer of salted charcoal paste surrounding the egg shell,neither is egg separation, cooking/steaming and mashing of cooked egg yolks required.

This is the second time I’ve made salted egg yolk butter shortcake.The method is slightly different from what I made the day before yesterday, but you can still make cookie dough with just four ingredients.No need for an electric mixer and no need to refrigerate the dough. this timeusedsalted egg yolk powder,It is very convenient to use, no need to wash off the salted egg shellthick layerTo make salted charcoal paste, you don’t need to separate the egg yolks and egg whites, nor do you need to steam or crush the cooked salted egg yolks, it’s much easier!

In my humble opinion, this cookie tastes just as nice as the one using cooked salted egg yolks and it has a crunchier texture which my son likes. If you have the time to try both recipes, do let me know your preference. :)

Ingredients:(makes about 40 pieces cookies)

Dough

120g salted butter(softened at room temperature)

50g caster sugar

180g blue jacket unbleached cake flour

60g salted egg yolk powder

Surface Decorations(optional)
1 egg yolk
white sesame seeds

Note:
1. You may replaced with unsalted butter, just add 1/4 tsp of salt.
2. Different brand of ingredients have different composites, thus there may be a slight difference in the end result.

I ran out of salted butter and replaced with unsalted butter + 1/4 tsp salt
If you don’t have salted butter at home, use unsalted butter + 1/4 teaspoon salt



ingredients:(Makes about 40 shortbread cookies)

dough
120 g salted butter(Softened at room temperature)
50g caster sugar
180g low gluten flour
60g salted egg yolk powder

surface decoration(optional, can be omitted)
One egg yolk
White sesame

Note:
1. You can use unsalted butter instead, just add 1/4 teaspoon more salt.
2. Different brands of materials have different composite materials, so the final product may be slightly different.

Preparation Preparation:
1. Sift the cake flour and salted egg yolk powder together. Set aside.

Method:
1.Use a hand whisk to cream the softened salted butter before adding in caster sugar and beat for about 2~3 minutes until a small peak is formed.

1. Use a whisk to stir the softened salted butter into a creamy consistency, then add fine sugar and continue stirring for 2 to 3 minutes to form a creamy frosting with a straight end.

2. Use a silicon spatula to mix in the sifted flour mixture in two additions. Mix till a soft and pliable dough is formed.

2. Add the sifted flour and egg yolk powder in two batches, and mix with a silicone spatula to form a soft dough.

Divide dough into 10g each, roll into a ball and place on a baking tray.

3. Pinch 10 grams of dough into small pieces with your hands, roll them into round balls, and place them into the baking pan at even intervals.

4.(optional)Apply egg wash on surface once and sprinkle white sesame seeds on it before brushing a second layer of egg wash.

4.(optional, can be omitted)Brush the surface with a layer of egg yolk liquid, sprinkle with white sesame seeds, and then brush the second layer of egg yolk liquid.

5. Bake in a preheated oven, top and bottom heat 170 degree Celsius for 10 minutes before lowering to 150 degrees Celsius to bake another 15 minutes or till surface is golden brown.(The cooking temperature as suggested in all my recipes serve as a guideline. Every oven has different thermostat, you may have to adjust the temperature and timing to suit your oven. )

5. Place in the preheated oven and bake at 170 degrees Celsius for 10 minutes, then adjust the temperature to 150 degrees Celsius and continue baking for 15 minutes or until the surface turns golden brown.(The baking temperatures and times in the recipe are for reference only.Every oven has a different thermostat, so adjust it yourself.)

6. Cool on a wiring rack completely before storing in an airtight container. Keep in room temperature for 2 to 3 weeks.



Note:Cookies actually taste even better and nicer after kept for a few days!

6. After baking, transfer to a cooling net to dissipate heat, store in a sealed box, and store at room temperature for 2 to 3 weeks.

Note:Collected for a few daysbiscuit, becomes more delicious!
