Make the scratch cake like this

The history of the cookie

No one really knows for sure how the scratch cake was invented. Some believe it came about through a failed attempt at baking brownies, while others believe the kladdkake is an evolved version of French chocolate cake. Kladdkakan seems in any case to have existed in Sweden since the 1970s and since 2008 we celebrate Kladdkakan day on November 7.

Different types of sugar

In the basic recipe for kladdkaka, caster sugar is used. But there are actually a few more varieties that can be fun to experiment with. Try replacing all or some of the granulated sugar with some of these varieties:

  • Cane sugar- As the name reveals, cane sugar is produced from sugar cane. It is a dry sugar and has a rich, caramel flavor.
  • Brown sugar- Brown sugar is a mixture of sugar crystals and dark cane sugar syrup. It has a spicy and less sweet taste.
  • muscovado sugar -Muscovado sugar is a fine-grained and moist sugar, which is produced from sugar cane. It is available in a light and dark variant. The light variant has a taste of caramel and the darker variant has notes of licorice in the taste.

  • Vispad crème fraiche -Use a high-fat crème fraîche (34%) and whisk until it thickens. Serve plain or flavored.

Gluten-free, lactose-free and vegan

Gluten-free sticky cake

To make the cake gluten-free, you can replace the wheat flour with an equivalent weight of gluten-free mix. Remember that 1 dl wheat flour weighs 60 g.

Lactose-free cake

If you want a lactose-free cake, you can use lactose-free milk and dairy-free margarine instead. You can also replace the butter with a flavorless oil such as rapeseed oil. But to get roughly the same fat content, you need to take 20% less oil than the amount of butter. So instead of 100 g of butter, you take 80 g of rapeseed oil.

Vegan scratch cake

For a vegan version, you can replace the milk with any plant-based drink. You can replace the butter with rapeseed oil according to the tip above or some plant-based alternative to butter. You can exchange the eggs for chickpea spade, also called aquafaba. For one egg, you take 3 tablespoons of aquafaba instead. It is also possible to replace the eggs with chia seeds. A tip is to grind the seeds in a mortar to avoid seed crunch in the sticky cake. For one egg, take 1 tablespoon of chia seeds and mix with 3 tablespoons of water. Then let it stand for about 10 minutes before stirring it into the batter.

Which mold should I use for a sticky cake?

You can, of course, bake kladdkaka in any shape you like. However, we recommend that you use a mold with removable edges. How do I know when the scratch cake is ready?

If you keep track of the time according to the recipe but still feel unsure whether the cake has been baked, you can easily check. You can tell that the cake is ready when the edges are firm, while the cake is a little wobbly in the middle. Also check that the entire surface has had time to be baked, otherwise you will get a sticky cake that is still raw.

Why does the scratch cake get crunchy?

If the texture feels crunchy when you eat it, it is because the cake was not baked long enough. So the crunchy part is the sugar that hasn't had time to melt. Increase the baking time next time.

How do I make scratch cake in the microwave?
